Jasper was professional and courteous. Steve the piano player added such a necessary vibe to the ambiance. The squid ink pasta was yummy. I loved my espresso martini! Will definitely come back.

Recommend making a reservation, else you may be dissuaded by an hour or more wait. My group got in with a reservation. Service was slow, which I assume was due to volume of guests (I think our whole dining time was about 2 hours long). Cuisine leans more Italian. I got a lobster risotto dish. Others in my group got pasta or wood-fired pizza. Mixed responses overall.

Musically I am a Miles and Trane kinda fella. Still the vocalist-pianist did an excellent job with the top 40/R&B repertoire. My server was very attentive and perceptive to the point that she reseated me closer to the piano. The ganache was like nothing I've ever had. It was great. Varia is an excellent venue for just about any occasion imaginable. I would definitely go back.

We came in for dinner one weeknight and the hotel was really busy, as there was a conference being hosted, but this restaurant was steady, but not busy. The décor is really interesting, as it has a secret dining room behind a bookcase and all of it is beautifully assembled. Menu is decent, with many typical Italian favorites. Starting with their arancini, it was decent. The temperature was warm, but not as hot as it should’ve been considering we expected it to be freshly fried, plated, and served. The jam under it was a little too sweet as well, but the texture and flavors were decent. Next up was their Cesar salad. This was my starter salad and it was quite substantial. The lettuce was great – very fresh and crunchy! The dressing was excellent, clearly made in-house and it was so very tasty. The combo of both was excellent! Lastly, I chose their chicken marsala for my entrée. It was plated quite nicely, looking very tasty. The chicken was breaded and appeared lightly fried, as the batter flaked off. The sauce was a little too sweet compared to my liking… I realized that marsala wine is sweet, but this might have been reduced or sweetened a little too much. The greens

Gorgeous location, delicious food, and impeccable service. The Panzanella salad was refreshing and full of flavor. The Radiatore was light and tasty especially the fennel sausage and homemade pasta. Thank you Ashley for the recommendations and lovely service.
